Champagne Bollinger Rosé

Bollinger has started the production of the non vintage rosé in 2008. This rosé is assembled on the basis of brut Special Cuvée (60% Pinot noir, 25% Chardonnay and 15% meunier) with the addition of a 5% red wine coming from the Côte aux Enfants of Aÿ. The result is very different from the Special Cuvée, with a much drier style, the “woodiness” typical Bollinger is fragrant and fruity in a set that matches beautifully.
The pleasure begins as early as pale pink with orange highlights, and tiny bubbles in the glass dance in large numbers. Approaching the glass nose to get the smell of ripe strawberries and raspberries. Once in the mouth these aromas are confirmed in a set cream, combined with some fruitiness and acidity supported by fully integrated whole. Persistence is very long, are mostly woody notes and fruity ones. That said, I really enjoyed this rosé that I find very suitable to combine with shellfish, fish and white meat is not too spicy or with desserts with strawberries or raspberries.
