Champagne Billecart Salmon Blanc de Blancs

Not that long ago that Billecart-Salmon has introduced a non-vintage blanc de blancs, since 1997 to be exact. Are used only for this champagne grand cru grapes (for more please see article about cru classification in champagne) from the villages of Avize, Cramant, Chouilly and Le Mesnil-sur-Oger.

It has a very pale yellow color with lots of bubbles. The aroma is of citrus especially, but also crusty bread. The style of the house is evident at the first sip, the mouth prevail in citrus, the acidity is noticeable, but not objectionable, mineral and savory finish. This is a blanc de blanc with food pairings, played more on the strength and the mineral chardonnay that the delicate and fruity notes. I do not love the blanc de blancs, but this Billecart won me over.
Ideal to drink with sushi, but also to a tempura fish and vegetables, as well as fish dishes or white meats with tasty sauces.
